Who are the Circassians and what is the Circassian Genocide?
Circassians are a native people of the Caucasus. They had been living in the North Caucasus for thousands of years. They are very good cavalry people. They have defended their homeland throughout history. They did not surrender their homeland against the Huns, Mongols, Timurids, and countless many invaders. The Russians, which quickly became a great power from the 16th century, began to occupy Circassia in 1763. They were planning to seize the Circassian lands in a short time. Because they saw the Circassians as a small community fighting on horseback in the mountains, unable to challenge an empire. However, Circassians showed an incredible resistance against the Russians for 101 years. The resistance was so incredible that a Russian general who raided a Circassian village was erased from history by the Circassians in weeks. The population of Eastern Circassia had dropped from 250,000 to 35,000 during the war. In 1827 the Russians were able to capture eastern Circassia. Circassians migrated to the lands of their western cognates just to continue fighting. The children of Circassians were born in the middle of the war and often only saw their fathers when their bodies arrived from the front in the village. This lifestyle exhausted the Circassian people. The herds that used to be abundant now became smaller. The Russians were committing incredible massacres against Circassians. When the Russians raided a Circassian village, they killed thousands of people, burned houses and raped women. 1,200,000 Circassians were killed during the war. In 1864, the last fighters of the Circassian people who sacrificed everything for the sake of independence were also surrounded and killed. Circassians were exiled to the Ottoman Empire by ships. During the exile, 600,000-1,000,000 Circassians died. 91% of the Circassian population was subjected to ethnic cleansing. Today, there are 720,000 Circassians in the Caucasus. There are 3 million Circassians in Turkey, 350,000 in Jordan and Syria, and 7000 in Israel.

Circassian Chicken or in Turkish "Çerkez Tavuğu" is a classic Circassian dish, adopted by the Ottoman - Turkish cuisine. The Circassians were tribal folk historically inhabiting the land separating the Black Sea and the Caspian Sea. Circassian chicken made its way into Turkish cuisine during the Ottoman period when the Ottoman Empire controlled much of this region.

Poached and shredded chicken served with a creamy and spicy walnut sauce, it was typically served as a main course, but it became also popular as an appetizer or meze served for the feasts. It can be also a great alternative to chicken salad and delicious filling for the sandwiches.

This May, the Circassian minority in Turkey marked a solemn anniversary. The Russian Empire deported the Circassians 155 years ago from their homeland in the northeastern shores of the Black Sea. Most of the Circassian exiles were absorbed into the Ottoman Empire, settling as far away as present-day Jordan. We take a look at their centuries old traditions that remain very much alive today.

Circassian music is music of the Circassians (Adyghes, Cherkess, and Kabardays), people from Northern Caucasus, Russia. Their music demonstrates their traditions and habits. Genetically, the Adyghe have shared ancestry partially with neighboring peoples of the Caucasus, with some influence from the other regions. The Circassian language, also known as Cherkess, is a member of the ancient Northwest Caucasian language family.

On this day 157 years ago, one of the most brutal military campaigns in modern history came to an end with the occupation of Circassia and the forced exodus of what was left of the Circassian nation after 101 years of defending their homeland from the Russian invaders. With more than 90% of the Circassian nation killed or forcefully expelled to what was then the Ottoman Empire, the atrocities committed during this war by the Russian invaders is considered by many the worst genocide in modern history. Circassia’s fallen heroes and the tragedy of ethnic cleansing may be unknown to many, but to Circassians, 21 May 1864 will never be forgotten.

A catering company in Amman is producing an array of Circassian delicacies.
The Samawar kitchen cooks such traditional dishes to keep the community's heritage alive.
STORY-LINE:
Suzanne Qamash runs through the ingredients needed to make the most famous Circassian dish.
Walnuts, garlic, butter, paprika, bulgar and chicken are combined to make 'shipsrapastra', Circassian for 'sauce and bulgar' and known as 'shipswapasta' in Arabic.
A cook stirs together the sauce ingredients, dropping some paprika into the mixture.
Shipsrapastra originated in the forested mountains north of the Black Sea and was made by the people of the North Caucasus.
But it's now being cooked in Jordanian kitchens.
Its popularity highlights the success of Circassian refugees who settled in the region more than 150 years ago.
"Shipsrapastra is not just ordered by Circassians and Arabs, but also Iraqis and many other types of people who enjoy it," says Qamash, who has worked here for 15 years.
These are the kitchens of Samawar, a catering company and restaurant run by the Circassian Charity Association's women's branch.
The workers prepare more than 200 orders every day.
Circassian dishes of shipsrapastra, the laqouma sweet bread, are popular but there's also demand for Arab staples like stuffed vine leaves and tabbouleh.
Right now, the kitchen is producing traditional pastries.
The Circassians hail from the northeast Black Sea coast and the Caucasus.
But they were driven out of their homeland after losing a protracted war against the Russians in 1864.
The Circassians settled across the Ottoman Empire - and their traditions came too.
"Our ancestors brought shipsrapastra here with them. Maybe it changed a little bit, lightening the fat or things like that, but the main elements of the dish have not changed," says Jan Janakat, general manager of Samawar.
The Samawar kitchen begin life as a one-room shop in 1971.
But with a 30,000 US Dollar donation from the Japanese government to pay for equipment, it has been able to move to a much larger space.
The money the kitchen earns supports educational and cultural programs for the Circassian community.
But the cooking itself has an important role.
"We are protecting our traditional recipes. We do not want them to be forgotten. We are directly reminding people 'if you see this you know it'," says Janakat.
"Making haleva, shipsrapastra, Circassian sweets, zataege or things like that, these are things that the next generation might not know. We want to protect this uniqueness."
The Samawar kitchen now employs around 30 women and two men who fry, bake, boil and steam meals for people across Jordan.
Princess Alia bint Al Hussein of Jordan is the current chair of the association which controls the kitchen.

21 is a one-hour historical journey, explaining the details of the eras since the beginning of the Tsarist Russia's war and Circassians heroes to this day
It's a docudrama film that resembles a documentary-style genre that features dramatized re-enactment of some scenes of the immigration actual historical events from that era with a new modern and contemporary style, in addition to a variety of old scenes that explain the suffering our ancestors went through from such migration, the secret of their resettlement in many of the Arab countries, the reasons for Tsarist Russia's war and their ambitions in the Caucasus. The film will interview a number of Circassian figures, including Dr. Mohammed Khair Mamser and other Circassian and Jordanian intellectual heroes.
