Circassian chicken (Adyghe: Jed de ships sch'etu) is a dish of shredded boiled chicken served under or in a rich paste made with crushed walnuts, and stock thickened with stale bread. Circassian Chicken is a classic Circassian dish, adopted by the Imperial Ottoman cuisine. Although it was typically served as a main course, it became popular as an appetizer, or meze. Being an Imperial-era dish, it can also be found in other cuisines of the Eastern Mediterranean. A similar walnut sauce and a chicken dish made with this sauce is known as satsivi in Georgian cuisine.

Circassian Circle is an Country Dance published by Chivers in 1822 (The Handbook of Modern Dancing). This version was interpreted by Howe in 1858 and then Burchenal in 1918. Burchenal's version is the same as Howe's except that she changes a "Balance" in Howe to a "Partner Swing".

Burchenal suggests three tunes for this dance, I picked "On the Road to Boston", a revolutionary war reel, which was performed by Colin Hume.

This appears to be the original name for what we now call a "Sicilian Circle". Today we think of it as a way of dancing in a circle rather than longways that can be applied to almost any minor set dance. But once upon a time there was an actual dance of that name.

The animation plays at 120 counts per minute normally, but the first time through the set the dance is slowed down so people can learn the moves more readily. Men are drawn as rectangles, women as ellipses. Each couple is drawn in its own color, however the border of each dancer indicates what role they currently play so the border color may change each time through the minor set.
