Circassia - Adyghe people
Nalchik (Karachay-Balkarian Nalchiq, Nalchyk[3], Russian: Nalchik; Kabardian: Nalshyk) is the capital of the Kabardino-Balkarian Republic, located in the North Caucasus in southern Russia. It is located at the foot of the Caucasus Mountains, at an altitude of 550 meters. The city is spread over an area of 150 km2.[4] The city has a green area of 991 hectares. Population: 240,203 (2010).
On the site of the present-day city of Nalchik, according to records, Kabardians and Balkars lived since 1743. Kent, 19. in the XIII century, it was founded as a military fortress in 1818 by the Russians, who captured the region during the Ottoman-Russian War of 1768-1774. Nalchik was an insignificant settlement before the October Revolution of 1917. It received the status of a city as the center of the Kabardino-Autonomous Oblast, which was established on September 1, 1921. There are road and railway extensions from the main roads in the North Caucasus to Nalchik, as well as a small airport.
The city of Nalchik takes its name from the Nalchik River on which it is founded. But this name is not considered to be directly derived from the word nal in Turkish

Circassian Chicken is a classic Circassian dish, adopted by the Imperial Ottoman cuisine. Although it was typically served as a main course, it became popular as an appetizer, or meze. Being an Imperial-era dish, it can also be found in other cuisines of the Eastern Mediterranean.
