How to make Soft Circassian Cheese
My Dear Untie Tatau's Home recipe .
First you will need these ingredients and utensils
For the purposes of this video, I am using lemon or lime juice any acidic liquid will be fine even vinegar, it's nice and cheap.
Traditionally you would use the leftover whey from the previous batch which you stored in the fridge, but never mind the result is the same and you can taste it in the cheese in the end.
Fill the pot with Milk, I like to use 6ltrs of milk it gives you around 1kg of cheese which is nice.
Make sure you don't get Ultra pasteurised Milk, other than that you can use any milk you wish, the best would be raw milk which you would have to boil for around 15- min to make sure you killed all the nasty bacteria
Set it on middle heat, wait till it begins to boil.
Occasionally stirring, make sure you do not scrape the bottom as burnt bits will go into your cheese and ruin it
The milk will develop froth on top, some like to remove this as it appears to make a light cheese (low fat), this is later turned into butter and or ice-cream tastes great and sweet. But I like to leave it for full cheese flavour.
Prepare the strainer and cheese mold
After boiling point is reached, reduce the temperature to low or remove the pot to prevent overspill
With the lime juice you must use as much as it takes to liberate the cheese curd from the whey. You will know that point in time at which you will have clear greenish liquid this is the whey protein. You can drink this after its great for the digestive system and many ailments, this is a true Circassian cure all, even a sanitiser.
Distribute the lime juice around the outside gently and then chasing it into the centre with your spoon, you will notice the curd liberating and the mixture getting thicker as the curd congeals
End point colour of whey, its ready to separate and strain
Here you can you a cheese cloth, I did not have one handy but it helps to strain the liquid after and hang to slightly drip dry for a few Hrs normally We just use the strainer mould , this will shape our cheese and instead of hanging to liberate the excess water we will place a heavy jar of water or some other weight on top
Salt it to taste, note that the moisture will draw the salt through the cheese overnight. Eat in the morning

Beautiful Circassian Music!
During the revival of nature, the spirits first return to the air, then water and lastly, to the earth, with a week in between each. It is celebrated in the Spring Equinox the day that the spirits return to the earth, in the name of Sozeresh, besides Tkhashkho. It is accepted as the end of Winter and the beginning of Summer in the Circassian Solar calendar. It is both a familial and communal holiday.
His idol, the seven-branched hawthorn was kept in the granaries of the homesteads. On the evening of the day before the Vernal Equinox, the members approach the granary. The daughter-in-law of the household would enter the granary and lock the door. She would then light the seven candles affixed on the branches of the idol, herself facing east. The senior male member of the house would call out to the Golden Rider: “Sozeresh, open the doors and let us in!” She would then go in and fetch the idol, open the doors and bring it in front of the family hearth with cheer and music from the others. It would be placed erect, its seven branches adorned with seven candles and a wheel of smoked Circassian cheese attached in the centre. The members of the household then would join hands around the idol and the matron of the family or the eldest daughter would make the prayer:
Sozeresh!
We thank you for the harvest of the Summer,
We beseech you to give us bountiful harvest in the future,
We beseech you, Sozeresh,
To protect our harvest from theft and our barn from fire!
The next ritual is called Masch’oshkhatykh (МашӀошхьэтыхь) “The Hearth Sacrifice”, which is held in each and every household simultaneously right after the extraction of the Sozeresh’s idol. The feasting began after the immolation of a black cow or black ram or black hen depending on the wealth of the family in the consecrated hearth, after which the Tkhamade would line up along with the members of the household by the hearth and voice the prayer and raises a toast, concluding the ritual:
With lasting fire in our hearth,
And well-lit and hot stoves,
Lacking no victuals to boil,
Nor crops to cook,
May Tkhashkho see us through next year!
The next phase is the feast, during which all sorts of food and drink are served throughout the night, and games are played to pass the time. This is to prevent oneself from falling asleep, for it is an ill omen and bad luck to slumber during this auspicious night. Before dawn, all able-bodied attendants would go to a nearby body of water such as a river or a stream and wash, no matter how cold the water may be, hardening their bodies and tempering their souls.
After coming out of the water, drying and warming themselves, people would gather in the sacred grove. They would tie colourful ribbons on the branches of the elder oak, naming their wish with the tightening of the knot. At dawn, everyone would face the east and greet the sun. The Tkhamade, with a bowl of bakhsym in one hand and a cheese pie in the other, would make a prayer:
O’ New Year’s light,
Enter out homes bringing happiness and goodness with you!
May disease and misfortune bypass us
A peaceful sky shine over us,
And our hearth be full of food,
And everything that your heart desires is in our hands!
Let's say “Amin” so that the coming year will be happy for all of us!
Throughout the following two days after the day of Vernal Equinox, relatives and neighbours would begin visiting one another to vocalise their wishes for them. The visitors would not recite the cliche wishes such as health, abundance, wealth, et cetera but directly name things that the members of the household lack and very much like to have. This was done by first asking for the thing or things from the host that they know they don’t have, to which the host replies saying that they would have never refused to serve the things that they ask for had they had them in the first place, and so the guests express their wishes.
Khurome (Хъуромэ) is an originally pagan holiday practise, later adapted into Christianity and celebrated on the 7th of January as the Orthodox Christmas. It seems as though Khurome normally was a continuation of the New Year celebrations, done during the second and/or third day of the three-day holiday, in which elders would parade the settlement, announcing their toasts, while the young collect food from doors while singing praises and wishes of abundance and health.
Households would donate their food generously, as the deed would soothe the troubled souls of the deceased, also because the year to come would be exiguous for the stingy. After the completion of these parades, the groups would convene in a designated place to cook and eat the food.
At the end of the three days, the idol of Sozeresh would then be taken back to the granary, where it would rest until the next year’s celebrations.
The day after, adults would begin a fast that lasts for forty-eight days, abstaining from meat and eggs.

The 21st of May, a day only a Circassian will remember. It is the day when the freedom loving people of the North Caucasus, the Circassians, after 100 years of continuous brutal war, nay massacre, by Tsarist Russia, and hundreds of years before that against other foes, finally succumbed to leave their heavenly lands under a deceitful trickery between the Tsars and Ottamans.
The result, a proud nation abandoning their heavenly homeland and falling into the wicked hands of manipulative war lords. Massacring and displacing over 1.5 million of this ancient civilization leaving less than 5% in the homeland in which they lived and loved from the dawn of time.
The peaks of the Caucasus mountains still cry’s for its children until this day, and today on the saddest of days, the 21st of May with the scar from 1864, every Circassians heart hears the motherlands cries for her children in the diaspora weeping out loud: Come back, for it is here you belong, free roaming amongst the peaks of Kazbek and Albrouz like your brave ancestors, but for now, always keep me in your brave heart.

Prof. Thompson: Neither Russians nor those who read Russian literature abroad look at those stories and I'm not just thinking of Pushkin in the Caucasus also Lermontov in the Caucasus an incredibly strong example of what I'm talking about. These are the people that the writers Pushkin and Lermontov that describe the genocide of the Circassians as if it were well just a hunting trip and they're just killing animals you know because that's what Hunters do and nobody is raising the question of well look these are these are real people. These people lived in those areas for hundreds of years and those areas belong to them basically. it's easy to fool both Russians and foreigners because I don't recall that anybody ever raised the issue of look at those works they describe it genocide nobody has raised that issue until I think Tolstoy in his last great short story Haji Murad, it's a very powerful story and it really tells us what was going on in the Caucuses and that's why I admire Tolstoy because he was the only one in Russian literature, Russian culture really that said it very succinctly and very beautifully. This was a genocide. and that as he said the Caucasus people didn't hate the Russians. They were beyond hate. They were so terribly destroyed that they couldn't even hate. it was it's a beautiful story should be read by everyone that is interested in Russian history and of course the Caucasus was not the only the only area Russians committed atrocities when you think about the conquest of Siberia which is really not written about much either in the West or in the East. That is something that still awaits his chronicler what was happening there we know a little bit of it but we do not really know the details and something that I think we should know but again the West just looks at War and Peace and looks at anna karenina and says well are are masterpieces or they are actually but you know you can you can be a great writer and at the same time promote a very uh evil ideology that happens in Germany a lot so Russia as well.
